Because of Cajun Country’s rich history regarding food,
there are several prominent traditional cuisines. One that stands out to me is
Duck Gumbo. Not every recipe out there has a prominent history in the lives of
those living in Cajun country. Duck gumbo first arose in Cajun country around
the time of the 18th century. Due to their location in regards to
the gulf coast, people of south Louisiana often relied on their fishing to reel
in meat for dinner. However some animals such as shrimp were collected seasonally
so Cajun country people had a problem. This is when duck gumbo jumped in to
save the day. Easy to find and its ability to feed a whole family, duck gumbo
quickly became one of the more used and even traditional Cajun dishes. Duck
Gumbo is cooked to perfection with roux which is a mixture of flour and fat to
add seasoning. Because of Louisiana’s thriving duck population, duck Gumbo will
always have a prominent effect on Cajun food.

Duck Gumbo sounds like a very delicious dish! The picture you used makes it look even more delicious. I had no idea such a unknown dish would such a history to it. Many meals today have little to no history to them and it's very different to hear so much history to one dish. I'm very curious to know what type of ingredients are used to Duck Gumbo that it so special. Good research!
